A simple and delicious lunch box recipe that can be quickly prepared in a pressure cooker. To make this recipe more nutritious, you can add fresh vegetables and tomatoes.
This will be a favorite lunch for some of us. My mother-in-law used leftover rice to prepare tomato fried rice. It was so delicious, you can pack it for lunch. When I was in college I often only serve tomato rice. Because it goes well with onion raita. Especially, Now it is helpful to me when I have less time, I can make this food quickly with a pressure cooker.
Tomato rice can be easily prepared for everyone.

Tomato is an easily available vegetable. Tomato rice can be prepared in several ways. First, you can make tomato gravy in Kadai, and then add rice to it, which is one of the easiest ways. Next, we can make it like tomato biryani. However, I will show the one-pot tomato rice recipe through step-by-step pictures and accurate measurements.

Preparation work:

1.Rinse rice very well and soak for about 20 mins.
2.After 30 minutes drain the rice and keep it aside.
3.when the rice is soaking prepare the veggies and keep it aside.
4.For green paste ,add garlic pods,ginger,shallots,green chili,mint and corinader leaves in a mixie .
5.grind it into a course paste.

Step By Step Instructions:

1.In a pressure cooker add a tbsp of ghee and oil.

2.Add the whole spices and saute well till the fragrence comes out.

3.Add cashews for good crunch(optional).

4.Add onions and fry them till it changes to golden brown

5.Then add green paste which is prepared already and saute well till the raw smell goes off.

6.Then add chopped tomatoes fry them till become mushy.

7.Now add all spice powders are turmeric,chili,coriander and garam masala one by one.stir it well.

8.Add fresh peas and mix it well.

9.Add one handful of coriander leaves.

10.Add required water and let it to boil.

11.Season with salt and ghee for fragrance at the final.

12.Now add soaked basmathi rice and mix it well.

13.Pressure cook the tomato pulao on medium flame for about 10 minutes or 1 whistles.

14.Let the pressure settle down on its own.then remove the lid and gently fluff the rice.

15.our Yummy Tomato pulao is ready and you can serve it with onion raita!!

Ingredients
  • 1 tbsp Ghee

  • 11/2 cup Basmathi rice or you can add regular ponni rice
  • 4 large Ripe Tomatoes Sliced
  • 1 large onions or 3 small onions chopped
  • 1 tsp coriander powder
  • 1 tsp Kashmiri chili powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red chili powder
  • 1/2 tsp Garam masala
  • 1/4 cup Fresh Peas
  • 2.5 cup water for 11/2 cup rice(1 cup rice =1.5 cup water)

Whole Spices
  • 1" Cinnamon
  • 1 Staranise
  • 1 Cardamom
  • 1 bay leaf
  • 1 Marati Moggu
  • 1 mace
  • 3 cloves
  • few Stoneflower
  • 10 Cashews
Green paste Ingredients:

  • 1 green chili
  • Few Mint and Coriander leaves

Recipe Notes

1.Try to do this pulao in a pot.it will be too tasty.

2.Adding riped Tomatoes will enhance the rich flavor of this rice.

3.After pressure settles down, fluff the rice gently, Don't break each grain.

4. You can add vegetables according to your choice, or you can make without adding vegetables.

5.Adding mint leaves give a nice aroma to this pulao.
